Blueberry Waffles with Blueberry Butter & Warm Blueberry Maple Syrup (Gluten-Free, Dairy-Free)

**These waffles are amazing. The flavor from all of the blueberries is so delicious and unlike anything you have had before! Top it off with some powdered sugar, fresh granola, and even some coconut whipped cream if you have it! These waffles definitely do not disappoint! Vegan??– no problem… use an egg replacer instead! Not dairy-free??, use regular milk! If you have any extra waffles leftover break them into the four pieces and freeze. Pop them in the toaster, toaster oven, or microwave when you are ready to enjoy them! They make for the perfect breakfast treat. 

Prep Time: 10 minutes

Servings: 8 

Belgian Waffles

Ingredients:

  • 1+1/2 cup gluten-free all purpose flour (add 3/4 tsp xanthan gum if it doesn’t have it)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1+1/2 tsp vanilla extract
  • 3/4 cup non-dairy milk (unsweetened)
  • 1 tbsp coconut oil (melted)
  • 3 eggs (separated (yolks, whipped egg whites)
  • 1/4 cup blueberries
  • 2 tablespoons honey OR 1 tablespoon organic sugar 
  • dash of salt

Directions:

  1. Preheat your waffle iron before preparing the batter. 
  2. In a large bowl, mix the dry ingredients together. 
  3. In two small bowls, separate the eggs and whip the egg whites until stiff peaks form. 
  4. Mix the milk, vanilla, egg yolks, honey, and melted coconut oil. Add this to the dry ingredients and mix thoroughly until no lumps are found. 
  5. Gently fold the egg whites and blueberries into the mixture.
  6. Scoop into your preheated waffle iron and cook for the designated time as stated on your waffle maker’s instructions. 

Blueberry Butter

  • 1/2 cup blueberries (fresh or frozen)
  • 1/2 cup butter (regular OR vegan, softened at room temp)
  • 2 tablespoons honey

Directions

  1. In a food processor, mix the ingredients until smooth and the blueberries are pureed. 
  2. Using a piece of parchment paper, spread the few scoops of blueberry butter onto the paper and form into a log and wrap well. 
  3. Place it in the refrigerator for about 1-2 hours to chill before using. If pressing for time, put it in the freezer for a few minutes to set before using. 

Warm Blueberry Syrup 

  • 1/4 cup blueberries 
  • 1/2 cup syrup 

Directions: 

  1. In a microwave-safe measuring cup, heat up the blueberries for about 15 seconds or until warmed through.
  2. In a separate measuring cup, microwave the syrup for about 15 seconds.
  3. Add the blueberries to the syrup and stir until well incorporated. Heat in 10-second intervals if needed.
