Chicken Pad Thai with a Creamy Peanut Sauce (GF, DF)

*This recipe is so delicious. It’s creamy and totally decadent and makes for a great alternative when you are craving carbs like pasta! Add in a bunch of your favorite veggies or switch it up and add beef or shrimp. Play with the flavors of your sauce to make it just how you like it. Some like it spicier and others like it sweeter… start with small amounts and keep tasting the mix till you have it right where you like it! This tastes even better as leftovers the next day; I could even eat it cold!!

Prep Time: 10 minutes

Cooking Time: 20 minutes

Serving Size: 6

Ingredients:

Sauce:

-2/3 cup water or chicken broth

-3 tablespoons soy sauce

-1-2 tablespoon honey

-1/4 teaspoon sriracha (more if you like it spicy)

-1 tablespoon peanut sauce

-1/4 teaspoon fish sauce

-1 tablespoon rice vinegar

-1 1/2 teaspoon ground ginger

-1 teaspoon minced garlic (or freeze dried)

-Juice from 1/2 of a lime

-4-6 tablespoons peanut butter (creamy) **add more if you like it even creamier/richer in peanut taste

Pad Thai:

-1 box of pad thai (rice) noodles

-2 eggs (beaten)

-1 pound chicken tenderloins (cut into cubes)

-Olive oil

-Steamed veggies of your choice!

Directions:

  1.  Marinate your chicken in a Ziploc bag with even amounts of soy sauce and sesame oil and a few good sprinkles of ginger. Let it marinate in the fridge at least 30 minutes!
  2. Cook your rice noodles according to the package. Once cooked completely, rinse your noodles under cold water and drain. Set aside until ready to be mixed with everything.
  3.  Heat your wok pan up with a little olive oil and then add the marinated chicken breast or tenders and cook until just about browned.

  4. While the chicken is cooking, whisk together the ingredients for your sauce. Make sure to mix everything together until there are no clumps.

  5. Once the chicken is done cooking, push it to the side of the pan and pour the 2 beaten eggs and cook until scrambled.

  6. Mix in your noodles and add the sauce. Mix all ingredients together until combined equally. Cook until the sauce is warmed through. Add in any cooked vegetables of your choosing (bean sprouts, snap peas, broccoli,etc.). Garnish with a little fresh cilantro and some chopped peanuts if you wish.
