Chocolate Chip Banana Ice Cream (Dairy-Free)

I came across this awesome recipe this morning and I was instantly intrigued to try it. Luckily, I try to keep a few bananas frozen at all times, so needless to say I was totally prepared for an impromptu ice cream sesh! This recipe is SO easy to make and only calls for 6 ingredients. If you don’t have a food processor, a strong blender should do the trick. I sort of modified this recipe a bit, so feel free to substitute some of the ingredients and add in other fun ingredients (cookie pieces, jimmies, mint, coffee, cocoa, fruit, etc).

Prep Time: 10 minutes
Freeze Time: 4-6 hours
Serving Size: 4-6

Ingredients:

  • 4 frozen ripe bananas (sliced/quartered)
  • 3/4 cup canned coconut cream (chilled works best) or sub with almond milk (won’t be as creamy, but it will work)
  • 3 tablespoons natural sweetener (honey, agave nectar, REAL maple syrup)
  • 2 teaspoons vanilla extract

    Add-Ins:
  • 1/4 cup dark chocolate chips + extra to add in (mini or chopped regular)
  • 1/4- 3/4  cup unsweetened coconut flakes (optional, add in as much as you’d like)
  • Optional **Add in 1/4 cup cocoa powder to make it more of a chocolate flavor!
  • Cookie pieces, fruit, jimmies, caramel…. add in whatever you’d like!

Directions: 

  1. In a food processor, mix your frozen bananas until smooth.
  2. Next, add in your coconut cream, natural sweetener, and vanilla extract and mix until well blended. Make sure to not add in any of the water from the coconut cream. Save that for a smoothie or something else later on. 🙂
  3. If you like the coconut flavor, add in the coconut flakes and pulse until well combined.
  4. Lastly, melt some chocolate chips over a double boiler OR in the microwave with a small amount of coconut oil so it doesn’t burn. Once it’s melted completely, add it to your mixture and pulse until it’s mixed in completely.
  5. Fold in some mini chocolate chips (or chopped regular sized chocolate chips).
  6. Put the mixture into an air-tight container (I used my reusable ice cream tub) and freeze until solid (about 4-6 hours).
  7. Enjoy with some added toppings (chocolate syrup, sprinkles/jimmies, nuts, or whipped cream (coconut or regular).
