Chunky Monkey: Mason Jar Overnight Oats (Gluten-Free, Dairy-Free)

**One part of my meal planning prep is easy overnight oats. You can prep them days in advance and have them ready to go whenever needed! Make a variety of flavors and have them ready to grab when you head out the door in the morning. I like to eat mine cold, but I have friends who enjoy it warm too… works both ways! **Add more milk if you prefer it creamier in texture.

Ingredients

 

    • 1/3 cup rolled oats
    • 1/2 cup non-dairy milk
    • 2 tablespoons peanut butter
    • 1/2 of banana (sliced) 
    • 1 tablespoon mini dark choc. chips
    • 1/2 tablespoon chia seeds **optional
    • a drizzle of honey (if you’d like added sweetness) 
    • 1 tablespoon chopped walnuts or sliced almonds **optional
    • cinnamon (a sprinkle or 2)

Directions:

  1. In a mason jar, add the oats in first and then all other ingredients except for the non-dairy milk.
  2. Put the cap on and shake it quickly and then add the milk and shake again until well combined.
  3. Put in the refrigerator overnight and enjoy in the morning! ***Served cold or warmed in the microwave.
