Easy & Delicious Crispy Sweet Potato Fries

**My favorite treat with lunch OR dinner has always been and will be sweet potato fries! The hubby and I like them extra crispy for an added crunch, but I totally don’t mind the few extra that are a bit thicker in size and therefore come out a little softer in texture. These fries definitely take a bit of time, but they are so worth it. If you know when you will be cooking them, try prepping them the night before and having them soak in water overnight until you’re ready to cook (this is how most restaurants prep their french fries).

Ingredients:

-6 sweet potatoes (peeled and cut into matchsticks)
– Himalayan salt
-corn starch

Directions:

  1. Peel & slice sweet potatoes into matchsticks. Don’t worry too much about size, as long as they are around the same width so they cook for the same amount of time. 
  2. Soak in cold water for 20-30 minutes. Preheat oven to 390 degrees.
  3. Remove from the water and pat dry with a dish towel or paper towel.
  4. In a bowl, add a few teaspoons of cornstarch and mix together.
  5. Spread fries evenly onto a cookie sheet lined with parchment paper.
  6. Bake for 30-45 minutes or until they have cooked to your liking.
  7. Add salt once you have removed them from the oven. If you add the salt before, baking they will become soggy while in the oven and won’t get crispy!
