**I mainly love this dish because it tastes so fresh! Between the spinach and zucchini and all of the flavorful herbs, it is surely something I enjoy eating after having a really good workout! I always feel amazing after eating this, the chicken sausage provides you with the protein you need to refuel your body and the colorful green veggies help to rejuvenate your energy! I like to eat the leftovers of this cold…very refreshing!

Ingredients:
- 1 1/2 lbs chicken sausage (1/2 hot, 1/2 sweet)
- 2 cups spinach
- 6 zucchinis (spiralized)
- olive oil
- crushed red pepper (to your liking)
- 3 cloves of garlic (minced/sauteed)
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 2 tbsp dried parsley & fresh to garnish **optional
- 2-3 tbsp Italian seasoning
- salt & pepper
Directions:
- Start by cooking your chicken sausage on medium-high heat. Remove the casing from the sausage by cutting a slit down the middle and removing the sausage meat. **I always remove the casing when cooking with sausage because it sort of creeps me out! If you don’t have sausage, you can definitely use ground turkey or ground chicken!
- While your sausage is cooking, start to spiralize your zucchini. Make sure to rinse/clean your zucchini well before spiralizing… I don’t peel it. I use my KitchenAid mixer attachment to spiralize, so I typically have to cut each zucchini in half in order for it to fit through. **This is one thing I like to prep on Sundays and I store in a tupperware container for the next few days and I have it ready to be cooked when I need it!
- After your meat is cooked all the way through, set it aside. Using a dutch oven or a sauce pan, saute your minced garlic with a little olive oil. Cook your zucchini noodles with a little bit of olive oil, salt, pepper, and 1 tbsp of garlic & onion powder on medium heat. Cook until it is tender or however you prefer the texture. Make sure to mix the zoodles every few minutes to assure it is cooking evenly. If you let it cook too long without mixing it, they will get very soft. I tend to cook my zoodles for about 5 minutes.
- Mix in the zoodles (with the sauteed garlic) and meat together in a big pan (I use my dutch oven) and let it all mix together on a low-simmer heat. Add in your other spices and some more olive oil. This is all about your own personal preference…if you prefer more or less of a particular spice, add in more or whatever else you’d like! Add in the spinach and mix into the zoodles & sausage. Add in another drizzle or two of olive oil and let cook until the spinach is cooked to your liking (you can saute in another pan and mix in if you prefer that). Garnish with fresh parsley if you like!
