*Gluten-Free Chocolate Donuts*
*Warning- once you eat one of these delicious donuts, you won’t be able to stop!!! So easy to make and super delicious!

Ingredients:
Donuts:
- 1/6 cup coconut oil (melted)
- 3 tablespoons mashed banana (about 1 small banana)
- 1/3 cup almond milk (unsweetened)
- 1/2 teaspoon vanilla extract
- 1 teaspoon apple cider vinegar
- 3/4 cups gluten-free flour
- 1/4 cup cocoa powder (unsweetened)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup cane sugar (could use honey or other natural sweeteners)
Frosting:
- 3 tablespoons vegan butter (or regular)
- 1/3 cup cocoa powder
- 1-2 tablespoons almond milk
- 1 cup confectioner’s sugar
- Sprinkles or other topping *optional
Directions for the Donuts:
1. Preheat your oven to 350 degrees. Grease the donut pan, so that your donuts easily come out once baked. My donut pan is from Williams-Sonoma. It’s awesome! Click on the picture below for details! Double the recipe to make a dozen! 2. Whisk together all of the dry ingredients (GF flour, baking soda, salt, sugar, cocoa powder). The gluten-free flour that I typically use is shown below!
3. In a small separate bowl, mash up 1 banana with a fork. It helps if you cut it in half and then mash it.
4. Mix up all of your wet ingredients (mashed banana, vanilla extract, almond milk, melted coconut oil. *When melting your coconut oil, take about 3-4 tablespoons out of the jar and place in a microwaveable measuring cup. Put it in the microwave for about 20 seconds to melt. Stir it and put it in again for about 10 seconds.
5. Add your wet ingredients into the dry ingredients. Mix together thoroughly until the batter forms to the right consistency.
6. Using a spoon or spatula, fill the donut pan with the batter and bake for about 12 minutes or until a cake tester comes out clean.
7. Let the donuts cool in the pan on a cooling rack for about 10 minutes, then remove from the donut pan and let rest until completely cool and it is ready to be frosted. For some of the donuts, you may need to poke some of the excess cake out of the middle to create the “traditional donut” look. It makes for a great snack while you wait to frost them! 😉
Frosting directions:
- Using an electric mixer, mix the vegan butter until smooth and fluffy. Add in the confectioner’s sugar and cocoa powder. Slowly, add in the almond milk and continue to mix until smooth. Add more almond milk if needed.**The photo below shows two different shades of the frostings. The darker I mixed/whipped on a lower speed for about 2 minutes, the lighter is more fluffy and I mixed on high speed for about 3 minutes.
- Add sprinkles or any other topping (chocolate chips, coconut, etc.) to your donuts and enjoy!!
