Gluten-Free Delicious Chocolate Brownies (GF/DF)

*These brownies are totally delicious!! I use dark chocolate chips and a bit of coffee flour to enhance the flavor of the chocolate. Try one of these brownies and it will totally hit the spot when you have a sweet tooth craving and you don’t have to feel guilty eating it!! If you prefer a vegan version, omit the eggs and use an egg replacer (flax & water). You won’t be disappointed giving these a try! 

Prep Time: 10 minutes

Bake Time: 24-30 minutes

Serving Size: 8-10

Ingredients:

*2/3 cup coconut flour

*1/2 cup coconut sugar

*1+1/2 tbsp coffee flour

*4 tbsp coconut oil (melted-1/4 cup)

*3 large eggs

*1+1/2 tbsp vanilla extract

*2 cups chocolate chips

Directions:

  1. Start the recipe off by boiling a pot of water and preheating your oven to 350 degrees.
  2. Grease and flour a 9 x 9 baking pan. I used coconut oil and coconut flour to prepare my baking pan. You can also use cocoa powder!
  3. Whisk all of your dry ingredients in a bowl (coconut sugar, coconut flour, coffee flour) and set aside. If you would like more information on what coffee flour is and where to find it, here is a good little summary from Trader Joes. 
  4. Take your chocolate chips and place them in a heat-resistant bowl and place it over the boiled pot of water.It’s important that the bowl simply sits gently on the top of the pot, but should not be submerged completely into the water.If the bowl becomes too hot, the chocolate may burn. Stir the chocolate frequently until completely smooth. Once melted, set it aside to cool for a few minutes before mixing into the batter.**If you put the chocolate in with the eggs when it is still hot, it will basically scramble the eggs–if you are short on time, temper the eggs (slowly mix together). NOTE:**If you have a legit double-boiler that’s even better/quicker for melting the chocolate. 
  5. Mix all of your wet ingredients (melted chocolate, melted coconut oil, vanilla extract, eggs) with the dry ingredients. Make sure to melt your coconut oil before mixing it into the batter.
  6. Add your batter to the greased baking dish and top it off with a few chocolate chips before placing it in the oven. Bake the brownies for about 24-30 minutes or until a cake tester comes out clean.
  7.  Let the brownies cool on a cooling rack for about 15 minutes and then cut and serve!
