*These donuts are unreal! You would never guess that they are gluten and dairy free! They taste almost identical to the cinnamon munchkins from Dunkin Donuts but aren’t loaded with all of the questionable ingredients. I use the gluten-free flour mix from Pamela’s Products (see the link below). The one I buy has almond meal in it which gives it additional nutrients and causes it to be a little darker in color than it typically would be.The frosting is a typical powdered sugar recipe, so feel free to do your own thing if you have a great vanilla frosting recipe already saved! If you are craving something sweet, you must try this yummy recipe out and you surely will not be disappointed!
Prep Time: 10 minutes
Bake Time: 8-10 minutes
Serving: 12 donuts
Ingredients:
Donuts:
- 2 and 2/3 cups GF Baking Flour
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- a few dashes of salt
- 1/2 cup cane sugar/coconut sugar (organic is best-can use honey or agave instead)
- 1 teaspoon nutmeg
- 1 and 1/2 teaspoons cinnamon
- 1/2 cup almond milk OR cashew milk (unsweetened)
- 2 eggs
- 3 tablespoons ghee (clarified butter, softened) *can sub for regular or vegan butter
- 1/4 cup coconut oil (softened)
- 2 and 1/2 teaspoons vanilla extract
- 1/2 cup non-dairy sour cream (see upcoming recipe)
Frosting:
- 2 and 3/4 cups powdered sugar (more, if needed!)
- 2-4 tablespoons almond milk
- 2 tsp vanilla extract
- 2 tablespoons vegan butter OR ghee (softened)
Directions:
- Preheat oven to 425° and grease your donut pan(s) lightly.
- Mix all of the dry ingredients in one bowl (flour, baking powder, baking soda, salt, sugar, nutmeg, cinnamon) and set aside.
- Mix all of your wet ingredients together (sour cream, almond milk, vanilla, eggs, coconut oil, and ghee). TIP: to soften your coconut oil and ghee, stick it in the microwave for about 5-10 seconds and then stir with a fork until it is just about melted.
- Fold your wet ingredients into the dry and mix until combined.
- Scoop your batter into the donut pan and bake between 8-10 minutes or until a cake tester comes out clean. Make sure to leave the hole part open so that you have the whole donut shape once it is done baking.
- While the donuts are baking, prep your frosting! Using a stand mixer or electric mixer add 1/2 of the powdered sugar and 1/2 of the almond milk. Add in all of the vanilla extract and vegan butter. Gradually add more powdered sugar and almond milk until it is easily able to spread on the donuts. If it becomes too thick, add more almond milk. If it becomes too thin, add more powdered sugar.
- Let cool for about 10-15 minutes before frosting (if you can wait). Frost and add sprinkles to top off before serving! Make sure to let them sit for around 10 minutes to let the frosting harden a bit before eating!
**Vegan Option: Use a vegan egg replacer (flax & water)
